Crazy Good Tacos

Okay Okay...so I know it was Wednesday, not Tuesday....TACO WEDNESDAY just doesn't sound the same as TACO TUESDAY...nope, it just isn't the same!  Well, honestly it may not sound as good, but i can PROMISE you it tasted way better!  It was by far the biggest and best meal I have had while on this new adventure.  I wanted something quick and easy and boy did I hit both in this hearty meal!

So this was a super easy meal. I happened to have pulled pork tenderloin from another meal in the freezer. (I took a pork tenderloin, put it in a 9X13 added lots of lemon and lime juice, garlic, cumin and roasted it in the oven, covered for about 4 hours at 300 degrees. I then shredded it with a fork, used it for a meal and froze the rest). Bingo...perfect for this recipe. If you don't have pulled pork, or don't want to do it, simply used boiled or rotisserie chicken that you shred, or ground turkey or chicken breast. Anything lean will work.
Place the thawed pulled pork in a glass dish.
Cut up a Lime.
Juice it over the pork.

 Cover it tightly with foil, heat it at 350 degrees for 20 minutes.

Any tortilla will work, i used the small fajita size with 90 calories, 2 grams of fat, and 1 gram of fiber.
Rinse and drain the black beans.
That's right folks! Thanks to some good friends (yes you Julie, Sally and Laura!) i have frozen summer corn that we husked in Septmeber.
Heat up the corn if you would like.
Cut up some lettuce.

Slice up some lime!

oops! Everytime i opened the refrigerator, it was there....staring me in the face! Couldn't help myself!
For each serving, take a tortilla, spray both sides with cooking spray. Drape over your oven rack as shown, shape like a taco shell, be sure it doesn't get too close to the heating elements. Bake at 375 degrees until crisp, about 4-5 minutes. They will get more crisp after they cool too. Use tongs!



Stuff each tortilla with...
1/3 cup pulled pork
lettuce
lime juice
3 T shredded cheese
3 T corn
2 T salsa
1/4 cup black beans
1 T fat free sour cream

Ready for this....
290 calories
7.5 grams fat
4 grams fiber

This was so filling.  I wanted to have another one because it was sooooo good, but i was stuffed! Pack it full of the lettuce and you are sure to have a terrific taco!

  1. This is the recipe I posted about on the blog. If you want leftovers to freeze and use again later....use 5-6 lbs, either a boneless pork shoulder, or pork tenderloin the tenderloin is leaner. Marinate overnight if you can with 1 head garlic, 1/4 tsp cumin, 1/4 tsp driend oregano, 1/2 cup brown sugar, 1 cup orange juice, 1/8 cup lime juice, 1/8 cup lemon juice. Bake covered at 275 degrees for about 6 hours, sometimes i push it to 300 degrees and cook it for 4 hours if in a hurry! Hope this helps!
